Which past experience would be most highly sought after in the ME

I am a mature age worker with experience in the following fields,
Two way radio communications as a Technical Consultant, Police Station Administration as an unsworn member, Australian Defence Force Guard at various Defence Establishments, Installation of high pressure water pumping/filtering systems as owner/Manager of a swimming pool services company, holder of Medium rigid truck licence, Certificate III in Information Technology and ex- Senior fire-fighter (volunteer).
Is there a particular skill set that stands out as the best to pursue for a chance at a job in the middle east??

Pilot position

Dear workable;
Assuming you were in the Avn. Co. Fwd. with 5th group you flew the UH1- series Iroquois's. Not knowing your current flight status as far as whether you continued as a Helitak Pilot and therefore are current as per FAR's you will be happy to know that there are several Rotary Wing Pilot positions open. If you are not current, it may be difficult, but I am of the mind nothing is impossible. The positions for Pilots are for transporting of Contracting personnel and not "Covert" or "Paramilitary" operations, this being said, the only Hughes Helicopters in country were the twin engine jobs the Marines use for insertions and Convoy operations. Bell Jet Rangers are generally not used either by contracting companies. If you are looking for Paramilitary/Security work, Blackwater and the other Security variants have open positions which may be worth looking into.
ITT has Aviation related jobs, no Pilots.
Dyncorp has a Black Hawk Test Pilot position in Germany.
Fluor, which usually has a ton of jobs is a no go for Pilots.
Even KBR which had a choke hold on many contracts up till 2008 is advertising only 1 Aviation position and that is overseeing an aviation fuel "Bag Farm".... Not a big demand for a pilot there. Which brings us back to Security. Make a few inquiries to Blackwater and look up current corporate security firms listed with the Logcap 4 program.

I was a helicopter pilot in Nam flying for CCC 5th Special forces flying black op missions into Laos.I often was designated flight lead which required agreat deal of mental accuity.I worked as a firefighter and was in charge of the aid calls doing emergency medical work.I can do whatever is required to bring success.Please consider.

You've been busy. That in itself my not be what you want to project, however. Companies look for someone who will commit to a job and stick with it as I am sure you are aware. The problem now is "How to sell yourself to the right company".
KBR has 50 position for Drivers and Mechanics, so you may want to supply a Resume which includes just the Driving, however, that being said, they also have position for skilled trade and Firemen, so you will need to go to their site and decide what experience you wish to stress.
Dyncorp has many IT positions and you would, again need to supply a resume which stress's those abilities.
Fluor has positions for Construction, and many of the jobs you are experienced in as well as jobs in Security, as does "Blackwater", but I would recomend other companies first.
ITT had a ton of jobs Pending Contracts, but they all were pulled when the contracts didn't come through. You and I have a similar problem, with all of our experience, our resume weighs about a kilo, and nobody wants to go through that, but remember, if you leave a gap in your resume, you will need to account for it.
